It’s an easy dessert that layers in vanilla wafers (that soften to the perfect cake consistency), sweet bananas and vanilla pudding (which is naturally sweetened with just maple syrup). In a medium saucepan, whisk together cornstarch, milk, maple syrup and egg yolks, breaking up any clumps. Heat over medium-high heat, whisking constantly until the mixture begins to thicken. Remove from heat and whisk in vanilla extract. Strain through a fine sieve, cover with plastic wrap directly on the surface to prevent a skin from forming and chill in the fridge for 2-3 hours.

Once the pudding has chilled, give it a good whisk to loosen the mix. Add in Greek yogurt and whisk to incorporate.
At the bottom of a glass, break up a few vanilla wafers, next layer the sliced bananas and finally the vanilla pudding. Repeat the layering until the glass is full. Place back in the fridge for another 2 hours or overnight. The wafers will soften and become cake-like. Enjoy!
