These sweet potato wedges are a great alternative to fries and partner so well with any grilled or roasted, meat, chicken or fish dish. It will be on your table more often than you can imagine.

Roasting time: 15-20 minutes
medium sweet potato, peeled and cubed (1-2” pieces)
Tbsp olive oil
tsp fresh thyme
Salt and freshly ground black pepper
Preheat the oven to 425°F/220°C.
In a large bowl place the sweet potato wedges and toss with the olive oil, thyme, salt and pepper.
Spread the wedges evenly on a lined baking sheet with sides, and bake for 10 minutes. Toss again and bake until done, probably another 5-10 minutes, depending on the size of the wedges.
Sprinkle with a little more salt & pepper and serve.
