What makes these mashed potatoes so special? They’re roasted!

medium red new potato, scrubbed, and, left, whole
½
head garlic, cloves, peeled
2
Tbsp olive oil
3
sprigs fresh thyme
1
sprig fresh rosemary
2
Tbsp butter
½
cup sour cream
1
pinch freshly grated nutmeg
1
Tbsp fresh parsley
1
Tbsp fresh chives

Step 1
Preheat oven to 375 degrees F.
Step 2
In a large roasting pan toss potatoes and garlic cloves in olive oil.
Step 3
Season with salt and plenty of cracked black pepper.
Step 4
Add thyme and rosemary.
Step 5
Roast for 40 to 45 minutes or until potatoes are golden and tender.
Step 6
Toss occasionally to prevent garlic from burning.
Step 7
Remove from the oven and let the potatoes cool in the pan about 10 minutes.
Step 8
Mash potatoes and garlic while still in the roasting pan with a hand masher.
Step 9
Leave skins on and potatoes chunky. Add butter, sour cream, nutmeg and fresh herbs and stir just to blend.
