A simple salad with sweet Bibb lettuce, tomato wedges, red onion and Kalamata olives topped with a creamy homemade vinaigrette.

cup mayonnaise
2 ½
tbsp red wine vinegar
Kosher salt and freshly ground black pepper

tbsp olive oil

tsp finely chopped fresh parsley
1
head bibb lettuce, separated into leaves
2
ripe beefsteak tomatoes, cut into wedges
½
small red onion, cut into rings
2
tbsp pitted Kalamata olives, halved

Step 1
Combine the mayonnaise and vinegar in a medium bowl with 1/2 teaspoon salt and a few grinds of pepper. Whisk in the olive oil and parsley.
Step 2
Arrange the lettuce leaves on a large platter and top with the tomatoes, onions and olives. Drizzle with some of the vinaigrette and serve.
