Ingredients

ripe tomatos

small red onion
1
green pepper
½
cucumber, peeled and seeded
1
lime (juiced)
bunch parsley, chopped
¼
cup olive oil
3
Tbsp canola oil
Salt and pepper, to taste

Directions

Step 1

Cut tomatoes into quarters and remove seeds.

Step 2

Dice seeded tomatoes, onion, pepper, cucumber, into 1/4 inch pieces and place in a mixing bowl.

Step 3

Add lime juice, canola oil, half the olive oil, and mix well.

Step 4

If more oil is needed, add remaining olive oil and mix.

Step 5

Adjust seasoning with salt and pepper.

Step 6

Add chopped herbs.
