Slowly melt the chocolate with the butter and corn syrup in a saucepan. Once melted, remove 3/4 cup of the mixture and set aside.
Break the tortilla chips into small pieces and crumbs. A good tip is to place the chips into a food bag and bash them with your knuckles.
Empty the crumbled tortilla chips into the melted chocolate mixture and stir gently. Add the mini marshmallows and chopped dried cherries.
Pour the mixture into a parchment paper lined small baking tray (9″X13″) and level out using a small rubber spatula. Pour the reserved 3/4 cup of melted chocolate over the top and smooth out.
Refrigerate for approximately 2 hours. Cut into small bars and dust with icing sugar and serve.
