Totani is an Italian word for flying squid, though this can be substituted with normal squid in this recipe.

lb(s) (250 g) totani (flying squid*) cleaned, cut into strips

potatoes

cup white wine
8
cherry tomatoes

chili pepper
1
clove garlic, finely chopped
1
small bunch of parsley, finely chopped

Tbsp extra virgin olive oil

Step 1
In a large pot, heat up some extra virgin olive oil with garlic and chili pepper. Add totani and let cook for about a minute on medium heat, stirring continuously to avoid sticking.
Step 2
Add potatoes, cherry tomatoes, and white wine and let cook together for another minute. Salt to season. Lower heat and cook for 30 minutes with lid on. Finish with parsley, stir will and serve immediately.
