Enjoy the flavours of the tropics with these delicious banana rolls and mango ginger lassie.

Mango Ginger Lassie

Cut each banana lengthwise into quarters.
In the middle of each wrapper, spread 1 teaspoon of chocolate hazelnut spread then place 1 piece of banana, on top of the spread.
Roll up each spring roll wrapper.
Melt 2 tablespoons butter and add the 6 rolls. Fry until golden on all sides, about 3 minutes.. Remove from pan. Cut in half on the bias.
Add remaining butter to the pan with 2 ounces rum, cook for 1 minute.
Serve two banana rolls and one scoop of coconut ice cream per serving. Drizzle with rum sauce.
Grate ginger and squeeze out the juice. Discard pulp.
In a blender puree yogurt, ginger juice, mango puree, ice cubes and honey until thick and smooth.
Pour into glasses and garnish with crushed roasted pistachios.
Serve with banana rolls.
