ingredients

g ground turkey (don’t forget to brown another 675 g for Friday’s tacos)

tsp canola oil (5 mL)

small onion finely chopped
tsp minced garlic in a jar (10 mL)

Tbsp flour (45 mL)

cup water (175 mL)

Tbsp dry red wine (45 mL)

pkg instant beef broth and seasoning mix

Tbsp dried parsley flakes (15 mL)

cup frozen peas (250 mL)
1
cup frozen peaches and cream corn (250 mL)
1
can cream corn (optional)
Reserved mashed potatoes from Sunday
egg white
Seasonal fruit, cut up

Step 1

Brown ground turkey in a fry pan at medium heat until fully cooked.

Step 2

Heat oil in another fry pan and add onion. Stir until the onion is translucent.

Step 3

Add garlic.

Step 4

Take half the meat mixture out and transfer to a mixing bowl with lid for your taco mix. Put the onions and garlic into the other fry pan along with the remaining meat.

Step 5

Sprinkle flour over turkey mixture in pan and stir to combine. Add water, wine and broth mix.

Step 6

Cook until mixture comes to a boil.

Step 7

Stir in parsley and simmer for 5 minutes at high to reduce.

Step 8

In the meantime…
Set oven to 400 F (205 C).

Step 9

Place turkey mixture in casserole dish. Top with peas, corn, cream corn and mashed p in that order. Top with reserved mashed potatoes.

Step 10

Brush top of potatoes with egg white.

Step 11

Set timer for 15 minutes, then broil until golden brown (2 minutes).

Step 12

Serve with cut-up seasonal fruit.
