Vegan Mushroom Quesadilla

You can still enjoy a good quesadilla with a vegan diet! Sauteed sliced mushrooms, vegan cheese, onions and garlic are wrapped in warm flour tortillas and served immediately for maximum wow factor.

Ingredients

Tbsp oil, divided

yellow onion, thinly sliced

cloves garlic, minced
Salt
1
package (250 g) mushrooms, thinly sliced

tortillas
1 ½
cups shredded vegan cheese

Directions

Step 1

Heat a sauté pan on medium heat.

Step 2

Add half of the oil to the pan and add onion, garlic, and salt. Sauté for 5-7 minutes.

Step 3

Add the mushrooms and continue to sauté for another 7-9 minutes or until the mushrooms and onions are soft. Pour the mixture into a separate bowl.

Step 4

Lightly oil the pan again, and place one tortilla into the pan. Sprinkle some of the vegan cheese onto the tortilla, as well as some of the sautéed onions and mushrooms. Top with another tortilla and sauté in the pan for 3 minutes on each side. Repeat with remaining tortillas. Serve immediately.
