ingredients

oz (357 g) rotini pasta
4
cup (1 L) frozen mixed vegetables

can (14 oz/398 mL) tomato sauce
1
cup (250 mL) evaporated milk
2
cup (500 mL) Black Diamond Mozzarella Cheese, shredded
1
tsp (5 mL) oregano
¼
tsp (1 mL) pepper
chopped fresh parsley (optional)

Step 1

Cook pasta in large pot of boiling salted water for 8 minutes or until just tender.

Step 2

Add frozen vegetables and cook for 2 minutes longer. Drain well and return to pot.

Step 3

In another saucepan, stir together tomato sauce, milk, 1 1/2 cups (375 mL) of the Shredded Black Diamond Mozzarella cheese and seasonings; cook over medium heat, stirring often, until cheese melts about 3 to 5 minutes.

Step 4

Add sauce to pasta mixture and toss to coat.

Serve immediately sprinkled with remaining cheese and parsley, if using.
