Veggie Goulash

Ingredients

brown rice (or grain of your choice), enough for 2 people
1
small onion, chopped

Tbsp olive oil

clove garlic, minced
½
tsp ground marjoram
1
large tomato, diced
1
cup cauliflower, cut into bite-sized florets

large carrot, chopped
1
small zucchini, chopped

oz can pinto beans
1
cup vegetable stock
paprika, to taste
½
tsp salt
½
tsp ground black pepper

Directions

Step 1

In a medium pot, cook the rice accordingly.

Step 2

While rice is cooking, in a large saucepan on medium-high heat, sauté the onions in oil until translucent. Add the garlic and marjoram and sauté for 2 minutes. Add the tomatoes, cauliflower, carrots, zucchini, beans, stock, paprika, salt, and pepper. Bring to a boil, then reduce heat. Simmer for 20-25 minutes or until the carrots are tender.

Step 3

Serve over rice. Makes 2 large or 4 small servings.
