Lighten up the classic salad made up of grapes, apples and walnuts by serving it in a lettuce cup.
slice turkey breast, cut into bite size pieces (can be omitted for a vegetarian option)
cup bite size green apple pieces
cup chopped celery
cup halved red grapes
cup chopped walnuts
cup mayonnaise or vegenaise
Bibb lettuce leaves
In a medium size bowl, combine turkey, apple, celery, grapes and walnuts. Mix in the vegenaise and stir until combined.
Pack lettuce leaves in an airtight plastic container. Spoon Waldorf salad mix into a separate plastic container and assemble at lunch.
