Grainy Mustard Dressing

Seafood Salad

Tbsp Extra virgin olive oil

tsp chopped garlic

Clams, cleaned

PEI mussels, cleaned

black tiger shrimp (2½5 PD)

pieces of calamari, trimmed and scored

red onion, sliced into thin rounds

red pepper, sliced into large pieces

Tbsp chopped parsley

Tbsp chopped tarragon

tbsp chopped chives
Juice from ½ lemon

cup grainy mustard vinaigrette

Step 1

Toss the clams, shrimp, squid, mussels, onion and red peppers

with the olive oil and garlic. Grill the seafood and

vegetables onto a pre-heated grill and cook until the

shellfish open and the squid is slightly firm. Toss the

grilled seafood and vegetables in a large bowl with the fresh

herbs, salt, pepper, lemon juice and grainy mustard

vinaigrette. Divide the tossed dressed seafood into 2 large

serving bowls and garnish with fresh herbs and crusty bread,

serve while still warm.
