We love this summery take on the viral whipped brie that’s all over social media right now. Whip your brie until it’s smooth and spreadable, top with roasted balsamic strawberries that have just the right amount of sweetness, and voila! It’s the perfect impressive appetizer that feels super impressive but is actually insanely easy.
Preheat oven to 375°F. While oven preheats, combine honey and balsamic in a small bowl.
Place strawberries on a lined baking sheet in a single layer. Pour over balsamic mixture, coating both sides. Cook for 20-25 minutes until strawberries are soft but still a bit firm.
While the strawberries are baking, prep the brie. Cut off rind of brie. It’s easiest to do this fresh out of the fridge while cold.
Dice brie into small, equal-sized pieces.
Using the blade attachment of your food processor, blitz brie until almost smooth, about 1 minute. Pour in olive oil, scrape down sides of food processor as needed and continue processing. It should take 2-3 minutes for smooth, spreadable brie.
Spread brie on a plate. Top with balsamic strawberries, fresh basil and a drizzle of olive oil.
