This all-season salad showcases wild rice. However, you can replace it with another Prairie crop, such as pearl barley or wheat berries.

Mustard Honey Dressing

Tbsp canola oil
2
Tbsp orange, juice
2
Tbsp white wine vinegar
4
tsp Dijon mustard
1
Tbsp liquid honey
¼
tsp salt
¼
tsp pepper
¼
cup chopped fresh mint
Wild Rice Salad
2
cup wild rice
½
cup diced dried apricot
½
cup diced dried apple
⅓
cup raisins
⅓
cup currants
¼
cup golden raisins

Step 1
In small bowl, whisk together oil, juice, vinegar, mustard, honey, salt and pepper.
Step 2
Pour over rice mixture and toss gently.
Step 3
In large pot of boiling salted water, cover and cook wild rice for about 35 minutes or until tender.
Step 4
Drain well and transfer to large bowl.
Step 5
Add apricots, apple, raisins and golden raisins; set aside.
Step 6
Let salad cool completely; cover and refrigerate for at least 4 hours or for up to 2 days.
Step 7
To serve, add mint and toss to combine.
