Ingredients

whole warm baked sweet potatoes
½
cup butter
1
cup white sugar

large eggs

tsp pumpkin pie spice

tsp vanilla

Tbsp lemon juice

recipe unbaked prepared pie crust, bottom only

Notes

The fibres on a sweet potato are the only drawback so the cleaning of the beaters will remove them. If you are mixing by hand sieve the sweet potato into the bowl at the beginning

Step 1

Prick skin of sweets. Place on cookie sheet at 375ºF for 45 to 60 minutes. Leave oven on.

Step 2

Split potatoes after baking and place in large mixing bowl without skins. Beat on low with electric mixer.

Step 3

Mix in butter. The butter will melt because the potatoes are still warm. Beat on low with electric mixer

Step 4

After each addition of ingredients clean off the sweet potato fibres that will accumulate on the beater.

Step 5

Add sugar. Mix. Clean beaters.

Step 6

Add eggs. Mix. Clean beaters.

Step 7

Add spices, lemon and vanilla. Mix. Clean beaters.

Step 8

Pour mixture into large unbaked pie crust

Step 9

Bake at 375ºF for 45 minutes or until center is set.
