We’re constantly cleaning the place down day after day. But for the real nitty gritty– we have a cleaning service that comes and they scrub the place down and make it spotless. Edgardo and Burt are a father and son team and these guys are some of the hardest workers I know. I see them once a week but they’re so busy cleaning - they never taste what comes out of the kitchen! So today, I’m cranking up the cooking, they’re taking a break from the cleaning, and we’re gonna have a relaxed family style meal”.
