The sweet and savoury flavours of our favourite holiday live in this waffle sandwich.
2 ½ cups Basic Pantry Pancake and Waffle Mix (See Cook's Note below)
1 cup milk
½ cup buttermilk
2 eggs, beaten
2 Tbsp oil
2 Tbsp sweet potato puree
½ tsp maple syrup
2 slices roast turkey
3 slices Brie
1 Tbsp cranberry sauce

1. Preheat waffle iron.
2. Place the dry mix in a large bowl (see Cook's Note for Basic Pantry Pancake and Waffle Mix). Add the milk, buttermilk, eggs and oil and stir until just combined.
3. Add syrup and pureed sweet potato and combine well. Let rest for 10 minutes.
4. Coat waffle iron with oil or non-stick spray. Follow the waffle iron’s instructions for cooking and greasing the iron in between batches.
5. Use one waffle to make two sandwiches. Break each waffle in half. Spread some cranberry sauce on one half. Then layer a slice of turkey and a slice and a half of brie. Repeat.
