California-Style Salad with Apple

Directions for: California-Style Salad with Apple

Ingredients

½ cup mayonnaise

2 Tbsp olive oil

2 Tbsp lemon juice

1 pinch salt and pepper

3 boneless skinless chicken breasts

2 Tbsp olive oil

1 yellow bell pepper, cored and cut into thin strips

8 cup lamb’s lettuce (mâche) or baby spinach

1 McIntosh apple, cored and thinly sliced

½ cup sliced almonds, toasted

½ cup fresh raspberries

2 Tbsp chopped chives

Directions

1. Dressing: In a bowl, combine the first four ingredients. Season with salt and pepper. Refrigerate.

2. Salad: In a skillet over medium heat, brown the chicken in the oil until cooked through, 4 to 5 minutes a side. Let cool. Cut crosswise into thin slices. Set aside.

3. In the same skillet over high heat, sauté the bell pepper for about 1 minute, adding more oil if necessary. Season with salt and pepper. Transfer to a plate and set aside.

4. Mound the lettuce on 4 plates. Top with the chicken slices. Drizzle with dressing to taste. Garnish with the remaining ingredients.
