This playful take on the traditional dirty martini offers an alternative to the sharp and bracing classic by swapping the usual olive brine for strained feta brine. Less imposing than the former, feta brine brings a more mellow savoury element to the drink. Finished with drops of chili oil and a single Kalamata olive, this sophisticated sip is a delicious way to start or wind down an evening.

ounces vodka

ounce dry vermouth

ounce feta brine, strained

Kalamata olive, pitted
Chili oil, to serve

Step 1

Fill a mixing glass with ice. Add the vodka, vermouth, and feta brine. Using a bar spoon, stir until frost creeps up the sides of the mixing glass.

Step 2

Strain the drink into small chilled coupes or Nick and Nora glasses. Using an eyedropper, dot the surface of the drink with the chili oil. Garnish with an olive skewered onto a cocktail pick.

Step 3

Serve immediately.
