Directions for: Cucumber and Carrot Salad 2


1 cucumber, sliced thinly

2 carrots, grated

Half a red onion, sliced thinly

2 fresh grated ginger

¼ cup cider vinegar

2 Tbsp honey

¼ cup olive oil

1 bunch fresh mint, chopped

salt and pepper


1. Put ingredients into a medium sized bowl and toss well.

2. Adjust seasoning.
