Grilled Corn and Red Onion Salsa

A recipe is merely words on paper; a guideline, a starting point from which to improvise. It cannot pretend to replace the practiced hand and telling glance of a watchful cook. For that reason feel free to stir your own ideas into this dish. When you cook it once, it becomes yours, so personalize it a bit. Add more of an ingredient you like or less of something you don’t like. Try substituting one ingredient for another. Remember words have no flavour, you have to add your own!

North American, Herbs, Grill, Tomatoes, Rice/Grain, Appetizer, Vegetables


Directions for: Grilled Corn and Red Onion Salsa

Ingredients

3 Tbsp of olive oil

4 cobs of corn

1 red onion, thickly sliced

2 tomatoes, chopped

Zest and juice of 2 limes

½ bunch of fresh cilantro leaves

1 chili pepper, minced

1 tsp of ground cumin

Salt and pepper

Directions

1. Heat a grill until hot.

2. Oil and season corn and onion slices. Place them on the grill and cook until the corn is slightly charred on all sides and the onion softens.

3. Roughly chop the onions and put into a large bowl. Scrape the kernels off of the cobs and add to the onion mixture. Add the rest of the ingredients and toss well. Serve with lamb burgers.
