Poached Turkey Breast

1 boneless, skinless turkey breast (about 675 g or 1-1/2 lb)
4 cup chicken broth
salt and pepper
1. Place the turkey breast and broth in a large saucepan. Season with salt and pepper. Insert a meat thermometer into the centre of the breast. Cover and bring to a boil. Reduce the heat and simmer gently until the thermometer reads 82°C (180°F), about 30 minutes. Drain, reserving the broth for another use (mole sauce, soup, etc.). Tent the breast with foil and let rest for 5 minutes.
2. Slice and serve with Mole Sauce.
