Directions for: Watermelon and Fennel Salad

Ingredients

Salad

5 cup watermelon, cubed

2 cup fennel bulb, thinly sliced (500 ml)

Dressing

½ cup extra virgin olive oil (125 ml)

¼ cup lemon juice (60 ml)

1 clove garlic, minced

1 shallot, minced

1 tsp Dijon mustard (5 ml)

Salt and pepper, to taste

Directions

Salad

1. In a large bowl combine watermelon and fennel. Drizzle the dressing on top and serve.

Dressing

1. To make dressing, in a medium glass bowl combine olive oil, lemon, garlic, shallot, mustard until well blended. Add salt and pepper to taste.
