Line a baking sheet with parchment and grease with neutral oil. Prepare a piping bag with a star tip (we used size #6B) and set aside.
In a saucepan over medium heat, combine the water, sugar, butter, vanilla and a pinch of salt. Once the mixture comes to a simmer and the butter has melted, remove from the heat and add in the flour and baking powder all at once. Mix vigorously with a spatula or wooden spoon until a dough forms. Transfer the dough to a medium bowl and set aside to cool slightly, about 5 minutes.
Mix in the egg using a spatula or wooden spoon. The dough will look broken at first but continue to mix until all the egg has been incorporated and the dough is smooth and slightly sticky.
Transfer the dough to the prepared piping bag. Pipe 4-5 inch lengths on the prepared baking sheet, cutting the dough with a knife and place into the freezer for 15-30 minutes until firm.
Preheat air fryer to 360°F. Whisk together the cinnamon and sugar in a wide shallow bowl.
Place the churros in the air fryer basket, leaving 1 inch in-between and air fry at 360°F for 8-12 minutes until golden brown. Depending on the size of your air fryer, you may need to fry in multiple batches. Toss the churros in the cinnamon-sugar mixture immediately after coming out of the air fryer.
To make the chocolate tahini dipping sauce: In a small saucepan on medium heat, warm the heavy cream and tahini. Whisk to combine and remove from heat when the cream starts to simmer. Pour over chocolate chips, let sit for 2 minutes then whisk to combine. Serve warm with fresh churros.
