Cottage cheese is having a moment right now: From cottage cheese toast to lasagna and now desserts! Naturally, we had to try the trending TikTok cottage cheese ice cream that has the internet going bananas for.

This banana pudding cottage cheese version is super simple to make and takes less than 10 minutes to whip up. Full fat cottage cheese is blended with maple syrup, ripe bananas and vanilla until silky smooth. Studded with chunks of graham cracker cookies (swap vanilla wafers if you can find them!) and fresh bananas. The result? A rich a creamy pudding-like dessert that actually tastes delicious as is. To turn this into ”ice cream”, pop it in the freezer for 2 to 4 hours for a more chilled treat. Any more than that, the cottage cheese freezes into an icy block which will need to be thawed on the counter for a minimum of 30 minutes to return to it’s creamy, rich consistency.

This recipe requires 2-4 hours chill time.

Step 1

In a blender or a medium bowl with a hand blender, puree cottage cheese, maple syrup, salt and 1 banana until smooth.
