In a large bowl, cream butter until smooth. Add icing sugar and extracts. Cream until fully combined. Add egg, salt and flour and mix until incorporated. Using hands, form dough into a 2-inch-high log and wrap tightly in plastic. Chill for at least 1 hour or freeze for up to 1 month.
Preheat oven to 350ºF.
Remove chilled dough from refrigerator, unwrap and slice into ½-inch rounds. Evenly space cookies on a large baking sheet (or bake in 2 batches on a small baking sheet).
