Chicken Sandwiches with Curried Mayonnaise

310 mL (1 1/4 cups) chopped cooked chicken
1 green onion, finely chopped
60 mL (1/4 cup) mayonnaise
10 mL (2 teaspoons) American-style prepared mustard
5 mL (1 teaspoon) curry powder
8 large slices sandwich bread
1 green apple, thinly julienned
50 mL (1 teaspoon) lemon juice
50 mL (1 teaspoon) olive oil
5 mL (1 teaspoon) fresh chives, finely chopped
1. In a bowl, combine the chicken, green onion, mayonnaise, mustard and curry powder. Season with salt. Set aside.
2. Using a 5-cm (2-inch) round cookie cutter, trim the bread into 32 crustless rounds. Spoon the chicken salad onto 16 rounds and top with the remaining rounds.
3. Just before serving, combine the remaining ingredients in a bowl. Garnish the sandwiches with the apple mixture.
