If you’re anything like me, your favourite part of any holiday meal is the stuffing. This elevated take on the classic comforting side dish is sure to become your new favourite, and pairs well with just about any holiday main. Plus, you don’t need to stuff it in a bird! The secret to making this stuffing extra tasty is the addition of spicy chorizo, hearty winter greens and using day-old bread. It really soaks up all the flavours, making for a seriously scrumptious side.

chorizo sausages, casing removed

Tbsp unsalted butter

cloves garlic, thinly sliced

medium onion, finely chopped

stalks celery, thinly sliced

Tbsp fresh sage, finely chopped

cups mixed winter greens, loosely packed (kale, collards and chards)
Salt, to taste
Pepper, to taste

loaf day old sourdough bread, cut into 1-inch cubes

cups low sodium chicken stock

large egg, lightly beaten

Step 1

Preheat oven to 350°F. Lightly grease a 9×12-inch baking dish.

Step 2

To a skillet over medium heat, add the chorizo sausage. Break up using a wooden spoon and cook until browned. Remove using a slotted spoon and set aside until ready to use.

Step 3

To the same skillet add butter, garlic, onion, celery and sage. Cook until the vegetables begin to soften, about 8 minutes.

Step 4

Add the winter greens. Season generously with salt and pepper. Cook until the greens have wilted, about 5 minutes. Remove from heat and set aside to cool slightly.

To a large mixing bowl add the bread, chorizo, winter greens mixture and chicken stock and egg. Toss until well combined.

Transfer to a prepared baking dish and bake until cooked throughout, about 45 minutes. If the top begins to brown too quickly, cover with a sheet of foil. Serve immediately.
