These Cranberry, Camembert and Pomegranate Bites Will Be Devoured in Minutes

Turn up the glam while hosting your holiday gatherings by serving these festive Cranberry, Camembert and Pomegranate Bites. Not only are they easy to put together, you can prepare the cranberry sauce in advance, or use whatever leftovers you may have from the holidays.

For the Sage Cranberry Sauce

oz (340 g) fresh cranberries

medium orange, zested and juiced
¼
cup maple syrup
¼
cup water
¼
tsp ground cloves
¼
tsp ground cinnamon
2-3
fresh sage leaves, chopped
A pinch of pink himalayan or sea salt

For the Camembert Bites

sheet frozen puff pastry (thawed in the refrigerator overnight)

oz (113 g) camembert cheese
1
cup homemade cranberry sauce

Tbsp fresh pomegranate arils
Fresh rosemary sprigs, for garnish

Ingredients for Cranberry, Camembert and Pomegranate Bites
Step 1

To make the cranberry sauce, combine cranberries, orange zest and juice, maple syrup, water, cloves, cinnamon, sage leaves and salt in a medium saucepan over medium-high heat. Bring to a simmer, then reduce the heat to medium. Cook the cranberries for about 10 minutes or until the cranberries break down and the sauce thickens, stirring continuously. Set aside to cool and reserve one cup for the camembert bites.

Cranberry sauce for Cranberry, Camembert and Pomegranate Bites
Step 2

To make the Pomegranate, Cranberry and Camembert Bites, preheat the oven to 375°F, and coat a 12 cup muffin pan with non-stick spray. Also, line a separate baking sheet with parchment paper.

Step 3

Unroll the puff pastry sheet on a floured surface. Cut the pastry sheet into 16 squares, 3 cuts across and 3 cuts lengthwise. The 4 squares at the bottom will be about an inch shorter than the rest, which will be used to garnish the camembert bites, (this step is optional). Set those squares aside and reserve for later.

Step 4

Gently separate the remaining squares and press them into the muffin tins to create a pastry cup. Use a fork to poke holes at the bottom of each puff pastry.

Step 5

Dice the camembert cheese into 12 pieces, about ½-inch thick. Place each camembert piece in the centre of the puff pastry cups, then top with one tablespoon of cranberry sauce, and a sprinkle of pomegranate arils. Place in the refrigerator.

Step 6

With the reserved puff pastry sheets, cut out mini circles using the bottom of a piping nozzle, about 1½-inch rounds. Place those rounds on the lined baking sheet.

Step 7

Bake the camembert bites and puff pastry rounds for 18 minutes. Take out the pastry rounds at the 15 minute mark.

Step 8

Let the pans cool for about 10 minutes. Garnish the Cranberry, Camembert and Pomegranate Bites with rosemary and the puff pastry rounds.
