Dulse, a mineral-rich seaweed, stands in for bacon in this vegan version of a B.L.T. Crisping the dulse in a hot pan gives it the crispy-snap of bacon, bringing with it a naturally intense saltiness and smoky “bacon” flavour. You’ll be tempted to salt your tomatoes, but resist – it will make this sandwich too salty due to the seaweed (ocean water is salty!).

Dulse is available at health food stores and some grocery stores.
Add dulse to a small nonstick skillet. Heat over medium-high heat, until brown on the bottom and crisp, about 3 minutes. Remove from pan and sprinkle with smoked paprika. Reserve.
Spread both slices of bread with mayonnaise and layer on tomato; season with pepper. Top tomato with seaweed, lettuce and sandwich with second slice of bread. Slice, if desired, and enjoy immediately (seaweed softens when in contact with the tomato).
