Directions for: Dried Plum Pesto


½ cup dried plums (prunes!)

1 Tbsp red wine vinegar

¼ cup olive oil

½ cup pine nuts

½ cup Parmesan cheese

2 large bunches fresh basil leaves

¼ tsp salt


1. Pile all the ingredients into your handy food processor and pulse them together just long enough to form a smooth chunky pesto with a bit of texture, not a smooth puree.
