Fried Chicken Waffles

Directions for: Fried Chicken Waffles


Waffle Mix

2 cup flour

1 tsp salt

1 tsp sugar

1 Tbsp baking powder

3 eggs

½ cup oil

1 ½ cup water

Lucky J’s Spice

2 cup all purpose flour

2 Tbsp Kosher salt

2 Tbsp Spanish paprika

2 Tbsp chili powder

1 Tbsp garlic powder

1 Tbsp onion powder

1 Tbsp rosemary

1 Tbsp sage

1 Tbsp white pepper

1 Tbsp black pepper

Fried Chicken

2 cup fry flour

2 Tbsp salt

2 Tbsp pepper

2 cup Lucky J’s spice

2 cup buttermilk

1 chicken cut into 3 pieces


Waffle Mix

1. Combine dry ingredients in a bowl and mix thoroughly. In a separate bowl combine eggs, oil and 1 cup of water. Whisk in dry ingredients while slowly adding the remaining water until the proper ‘loose batter’ consistency is reached. Allow to sit for 15-20 minutes before using.

Lucky J’s Spice

1. Combine all ingredients thoroughly until the flour is evenly colored.

Fried Chicken

1. Dredge chicken in fry flour, shaking off excess flour. Dip into buttermilk wash until coated thoroughly. Dredge in spiced flour until well coated, shaking off excess flour. Fry for 15-20 minutes at 300 degrees or until chicken reaches an internal temperature of 165 degrees. If a fryer is not available, you may pan fry the chicken in 2” of canola oil.

2. Assemble fried chicken on the waffle. Serve.
