This is the sweeter side of the traditional Mennonite perishky recipe, which also has a savoury meat-filled cousin.

Ingredients

cups (500 mL) flour (approx.)
1
tsp (5 mL) baking powder
1
tsp (5 mL) salt
1
Tbsp (15 mL) lard
1
egg, lightly beaten
½
cup (125 mL) milk
½
cup (125 mL) cream
2
cups (500 mL) chopped fruit (such as apples and gooseberries—whatever is on hand)
1
tsp (5 mL) sugar (approx.)

Directions
Step 1
In large bowl, sift together flour, baking powder and salt. Rub in lard. Whisk in egg, milk and cream. If dough is too soft, add a little more flour.
Step 2
On lightly floured work surface, roll out dough. Cut into 24 to 36 squares. Add about 1 tbsp (15 mL) fruit to centre of each square. Sprinkle with sugar (use more if you like it sweeter). Fold opposite corners over and seal, pinching edges, so juice will not run out.
Step 3
Bake in 400°F (200°C) oven for 25 minutes or until golden.
