Ingredients

Chorizo

2 guajillo dried chiles, rehydrated, seeded

1 dried ancho chile, rehydrated, seeded

1 Tbsp (15 mL) smoked paprika

1 tsp (5 mL) ground cumin

1 tsp (5 mL) ground coriander seeds

A few sprigs of oregano, chopped

4 clove garlic, minced

¼ cup (60 mL) red wine vinegar

2 lb(s) (1 kg) ground pork

1 tsp (5 mL) salt

2 Tbsp (30 mL) olive oil

freshly ground pepper

water if necessary

Garnish & Assembly

refried beans

pico di gallo

queso fresco cheese

tortillas

Directions

Chorizo

1. For the chorizo, using the food processor, process all the ingredients except oil until combined. Season with salt and pepper. In a large skillet, heat oil on medium-high heat and cook the meat, stirring until the meat is cooked, about 10 minutes. Add a little water to keep the meat moist if necessary.

Garnish & Assembly

1. Serve on tortillas with refried beans, pico di gallo and cheese.
