Michael's Sweet Potato Soup

Directions for: Michael's Sweet Potato Soup


¼ cup butter

1 onion, chopped

4 clove garlic, chopped

2 sweet potatoes, diced or shredded, unpeeled

6 cup orange juice OR 6 cups of chicken broth OR some of both

½ cup heavy whipping cream

1 tsp chili powder

1 tsp cumin

1 tsp cinnamon

½ tsp salt


1. In a soup pot over medium heat, melt the butter. Sauté the onions and garlic until they are golden brown and delicious, a few minutes. Add the sweet potato, orange juice, whipping cream, chili powder and cumin. Cook until the potatoes are soft, about 15 minutes. Whisk in the cinnamon and salt, smoothly puree with an immersion blender, serve and share.
