The best part of any meatloaf is arguably the ketchup glazed crust and the air fryer makes it that much better. Perfectly browned and caramelized while keeping the inside flavourful and juicy, these mini air fryer meatloaves are the perfect easy weeknight meal. This recipe is portioned into 10 personal sized meatloaves, but can also be made into one large meatloaf.

Tbsp extra virgin olive oil

small onion, finely chopped

stalks of celery, finely chopped

red pepper, finely chopped
Salt, to taste
Pepper, to taste

lbs lean ground beef
2
large eggs
1
pinch red pepper flakes
1
tsp garlic powder
2
Tbsp freshly chopped parsley

dash Worcestershire sauce
1 ½
cups panko bread crumbs
Ketchup, to finish

Step 1

In a frying pan over medium heat add the olive oil, onion, celery, red pepper, salt and pepper. Cook until the vegetables begin to soften, about 5 to 8 minutes. Set aside and let cool slightly.

To a large mixing bowl add the ground beef, eggs, pepper flakes, garlic powder, parsley, Worcestershire, bread crumbs and cooled veggies. Season generously with salt and pepper.

Mix until ingredients are combined, do not over mix. Divide the mixture into 10 equal portions and shape into mini meatloaves.

Preheat the air fryer to 375°. Transfer meatloaves to the air fryer in a single layer, working in batches if necessary. Brush with ketchup and cook until the internal temperature reaches 160°F.
