Oven Roasted Jerusalem Artichokes

Let the natural flavours of this sweet, nutty vegetable shine through, simply roast and enjoy.
1 lb(s) Jerusalem artichokes, halved (450 g)
3 Tbsp olive oil (45 ml)
Salt and pepper
1. Preheat oven at 350F (180C).
2. Cut artichokes in half.
3. In a bowl, mix everything together. Place on a baking tray, flesh side down and bake in the oven for 45 minutes or until caramelized and tender.
