This fried recipe is shockingly simple and gives day old cooked rice new life.

Ingredients

cup cooked rice, preferably day old
2
eggs, lightly beaten
1
Chinese sausage, sliced thinly (OR lardon, bacon, chorizo, sausage)
1
green onion, sliced ¼"
2
Tbsp light soy sauce
1
tsp kecap manis
Salt and pepper to taste
Fried egg (optional)

Directions
Step 1
In a wok or non stick pan add a little oil to coat the cooking surface.
Step 2
Turn heat on high. As soon as oil starts to smoke, add the sausage. Keep stirring to ensure even cooking.
Step 3
Pour in the beaten eggs. Using a spatula, scramble the eggs.
Step 4
Add the rice, keep stirring and turn the heat down to medium.
Step 5
Break any lumps in the rice, trying to have individual rice grains.
Step 6
Add the soy sauce and evenly coat the rice with it.
Step 7
Add the kecap manis and caramelized the rice.
Step 8
Turn heat back on high to fry the rice for minute.
Step 9
Turn heat off completely and stir in the green onions.
Step 10
(Optional) Fry an egg and place it on top of the fried rice!
