West Oak, located in Yaletown, is a high-energy, modern-rustic space that features custom wood beams, white oak tabletops and chairs, and a buzzing open kitchen. Dining at the bar allows guests to watch the chefs in action as they strive to tell a story behind each dish; plating the finest, seasonal ingredients, and allowing their natural, rich flavours to shine through.

I was fortunate to grow up on a farm in Saskatoon, where I was able to enjoy the fresh, seasonal foods grown on my family’s property and nearby farms. Close relationships with farmers gave me a lifelong appreciation for their hard work and dedication, which continues to improve my honest approach to cuisine.
